Many evening events seem to be hitting in the fall, and dinner needs to be healthy and quick!! Tonight was an old favorite—sausage and cabbage. It takes 20-30 minutes. For those on a lower carb diet plan, this is a Keto friendly dish. So, since we are in a hurry to eat and run, I’ll be brief. Haha!

Assemble the following:

1/2 stick of butter
1 pound of sausage sliced into 1/2” pieces (I used Conecuh Original Smoked Sausage, but you can use Turkey Sausage, Kielbasa, even ground sausage…whatever you normally enjoy in your sausage dishes.)
2 small to medium onions, diced
1 small to medium cabbage, chopped into 1” pieces
1 can of Rotel (if your group doesn’t do spicy, can substitute 1 can of diced tomatoes)
1 teaspoon salt
1/2 teaspoon ground pepper
2 tablespoons diced garlic cloves or prepared chopped garlic.
1/2 cup water
A splash of apple cider vinegar.
To prepare:
Melt butter in dutch oven or large skillet. Add onions and sauté until they are soft. Add sausage and continue to cook until sausage brown slightly. Add cabbage and cook, stirring often, until cabbage wilts and begins to soften. Add remaining ingredients and 1/2 cup of water.

Cover and simmer for 20 minutes or until cabbage is tender. Stir occasionally. Uncover for an additional 5 minutes to allow liquid to reduce.
Check seasoning and add additional salt and pepper if needed.

Hurry up and cook and yum!
