Franklin’s Breakfast Skillet

My husband likes to cook, and this morning he took over the range top to prepare a hearty breakfast dish. Franklin’s Breakfast Skillet works for two or is easily expandable to serve a crowd. This is a thrifty one skillet meal, which is great when you don’t want a lot of dishes to do. We are under a tropical storm watch here, and it seemed prudent to breakfast-up this morning!

Ready to serve up! Such a warm, delicious breakfast.

For campers and outdoors folk, this is also a great camp-stove meal or can even be prepared in a Dutch oven suspended over an open fire. This breakfast skillet also makes great leftovers.

For Franklin’s dish you need the following ingredients for two very hearty servings:

4-6 strips of bacon or other meat* (we like hickory smoked thick cut, but any bacon will do).

1 medium or 2 small red potatoes, skin on, diced into 1/2” cubes

1/2-1 medium white or yellow onion, diced

1/2 bell pepper, diced

3-4 large eggs, stirred

Salt and pepper to taste

Tomato, diced (optional)

* Other meats you can substitute would be 1/2 lb of smoked sausage links, 1/2 lb sausage, 1/2 lb turkey sausage, 1/2 lb ham. If using ground turkey sausage, add 1 Tablespoon of Olive oil to skillet before browning.

Here’s how he does it (while I watch — love it when my husband is cooking!)

Dice bacon into 1/2” pieces and put it in a skillet. He is using a 10” skillet today. Cook bacon (or other protein) until done and then remove it on to a paper towel.

Add potatoes to skillet and cook until browned and tender. Add bell pepper and onion and continue to cook, stirring until onions are transparent.

Pour eggs over mix and return bacon to skillet. Stir until eggs are cooked. If desired, dice and add a small tomato just before serving. This adds a fresh element to the dish. Add salt and pepper to your liking.

Four eggs. Husband decided to use the fancy bowl (wink) to stir the eggs…that’s okay. 🙂

Kids love this and its a great way to add some veggies in the morning meal. You can omit or add any veggies you would normally see added to an omelet or quiche, and can also add cheese if desired. So. Many. Options!!!

And there it is—Franklin’s Breakfast Skillet! The kitchen smells wonderful. Since he cooked, I cleaned and only had to wipe out one skillet. Yay.
